Honestly, i have never used a breath controller. But MIDI is pretty much the same on all controllers.

Instead of a foot pedal or slider, the device you have will send signal to the input on the CME or whatever device you have that accepts a breath controller's output. Then that signal is converted to a stream or values (between 1 and 128) and assigned to a specific function, either in your DAW or software instrument, what have you. So, essentially that stream of values can really be used to control pretty much anything that a MIDI controller can be assigned to. Channel Volume Panning Attack, sustain, release, cutoff, etc. Some of your soft synths I suspect would have default settings for accepting breath controller values.

But you will have to check the manual on whatever it is you hope to use the breath controller with.
